Banana Bread

2 cups flour (all-purpose, whole-wheat or a mixture of both)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup vegetable oil
1 cup sugar
2 eggs, beaten
3 or 4 bananas, mashed
1/2 tsp vanilla
3 TBSP milk

Stir together dry ingredients.
Beat together remaining ingredients.
Add wet ingredients to dry ingredients and blend until just combined.
Pour into greased loaf pan and bake at 350 for 1 hour and 15 mintues, or until a toothpick comes out clean.
Cool in pan 10 minutes and then transfer to wire rack.


Let cool, slice stick in freezer bags, pull out slices as needed
