Blueberry Muffins - Brenda's 2

1 ¾ Cups Sifted All-purpose Flour              
½ Tsp. Salt
2 ½ teaspoon Double Acting Baking Powder             
2/3 Cup Sugar

·      Sift together flour, salt baking powder and sugar into mixing bowl.

1 large egg                                    
2/3 cup milk
¼ cup shortening                           
1 teaspoon vanilla extract
1 cup fresh blueberries

·      Add egg, milk, shortening and vanilla extract.
·      Mix only until all ingredients are blended using about 28 strokes.
·      Stir in dry washed blueberries.
·      Drop batter into well-greased, lightly floured muffin pans, filling them ¾ full.
·      Bake in a preheated moderate oven (375 degrees) for 20-25 minutes.
·      Serve hot, Makes 14 muffins.
