Fruit Cake

8 oz. each red and green maraschino cherries                  1 Cup Sugar
1 16oz. mixed fruit                                                1 stick of margarine
½ Cup Orange Juice                                               2 Cups Self Rising Flour
2 Cups Pecans, chopped                                        1 TBSP Vanilla
4 Eggs

  • Cream margarine, sugar, and eggs.  Add orange juice and vanilla.
  • Dust fruit and nuts with 2 TBSP flour.  Add.
  • Add the rest of the flour and stir well.
  • Pour into a greased and floured pan.
  • Bake 1 ½ hours at 300.
  • Use 1 tube pan or 2 small loaf pans
