Pecan Brittle

2 cups chopped pecans

1 ½ cups sugar

½ cup light Karo syrup

2 TBSP water

1 ½ tsp. baking soda

·      Place first four ingredients in a large frying pan and cook, stirring occasionally, for 10 minutes or until golden.  Start out on high heat, then once cooking, reduce to medium, medium high

·      Stir in baking soda.

·      Mixture will foam and deepen in color.

·      Quickly pour onto a greased cookie sheet, spreading as thinly as possible.

·      Cool until no longer sticky.

·      Break into several bite-sized pieces.

·      Keeps well in air-tight container
