Carrot Cake

3 cups flour                                                  2 cups sugar
1 tsp. cinnamon                                           ½ tsp salt

  • Mix dry ingredients together, then add
1 ½ cup oil                                                   3 eggs
2 tsp. Vanilla                                      

  • Mix well, then add the following and stir by hand
1 ½ cups chopped pecans                                      2 cups grated carrots
1 can crushed pineapple juice                        ½ cup coconut

  • Bake in a greased tube pan 1 hour at 350 or until well done
