Chocolate Eclair Cake

Box of Graham Crackers, reserve some crumbs for topping
Large Sugar Free Instant Vanilla Pudding                       
6 cups of Milk
Large Sugar Free Chocolate Pudding                              
Cool Whip

  • In 2 separate bowls, prepare the pudding with the milk.
  • Layer a 9x13 dish with graham crackers, then spread the chocolate pudding on top,
  • Layer another layer of graham crackers, and then the vanilla pudding
  • Repeat.
  • Top with cool whip, and sprinkle graham crackers crumbs on top.
  • Let set out of about 20 minutes, then refrigerate.


*may add a little vanilla to cool-whip for a little more flavor
