Peanut Brittle

1 Cup Sugar                                                               
½ Cup Light Corn Syrup
1 ½ Cup Raw Peanuts                                         
¼ tsp. Salt
1 Tablespoon Margarine                                              
1 Teaspoon Vanilla
1 Tsp. soda

  • Combine sugar, corn syrup, peanuts and salt in a deep   3 quart casserole.
  • Mix well
  • Microwave at HIGH for 7 ½  - 9 ½ minutes or until light brown.
  • Add butter and vanilla, mix well.
  • Microwave on HIGH for 1 minute or until mixture reaches hard crack stage (300)
  • Stir in soda; pour onto a buttered cookie sheet, spreading thinly.
  • Let cool and break into pieces.  Yields about a pound.
