Scotch Chocolate Cake

SCOTCH CHOCOLATE CAKE
(Mamaw Yates)

2 Cups Plain Flour                                              2 Eggs
2 Cups Sugar                                                      1 tsp. Vanilla
1 Stick Margarine                                                 1 Cup Water
1 Cup Wesson Oil                                               4 Tbsp. Cocoa
½ Cup Buttermilk (add 1 tsp. soda)

·        Combine flour and sugar in large mixing bowl.
·        Combine margarine, oil, cocoa and water. Bring to a boil.
·        Pour over flour and sugar.
·        Add buttermilk, eggs and vanilla.
·        Bake at 350 degrees for 30 minutes.

ICING:
1 stick margarine                                       4 TBSP Cocoa
6 TBSP Milk                                                1 Box Powdered Sugar
1 tsp. Vanilla                                              1 Cup Nuts

·        Bring to a boil margarine, cocoa and milk.
·        Remove from heat, add powdered Sugar, vanilla & nuts.
·        Add to the cake as soon as removed from oven.
