Twice Baked Potato Casserole

6 med. Unpeeled potatoes (baked)
1 lb. bacon
2 cups cheddar cheese
¼ tsp salt
¼ tsp pepper
24 oz. Sour Cream
2 Cups Mozzarella Cheese

Always wash potatoes thoroughly to remove dirt, being careful not to break the skin. Pierce skin with a fork to prevent bursting in the oven. To prevent excessive shrinkage during holding, coat the skin lightly with vegetable oil and this will help the skin become crispy

  • Cut baked potatoes into 1 inch cubes.  
  • Place half in greased 9x13 dish.
  • Sprinkle with half of salt, pepper and bacon.
  • Top with half sour cream and cheeses.
  • Repeat layers.
  • Bake uncovered at 350 for 20 minutes or until cheese is melted.
