6 medium sized sweet potatoes
1 cup orange juice
2 tsp grated orange rind
1 TBSP cornstarch
3 TBSP melted butter
1/3 cup brown sugar
1/3 cup white sugar
pinch of salt
- Cook sweet potatoes tender in skins (about 30 min) in boiling, salted water.
- Drain potatoes, peel.
- Place in greased shallow baking dish
- Heat oven to 350
- Meanwhile in a heavy saucepan, combine orange juice, orange rind, cornstarch, melted butter, brown sugar, white sugar, and salt. Mix well
- Cook, stirring until thick.
- Pour over potatoes
- Bake at 350 for 30 minutes, basting occasionally.
