Quick Rolls


2 pkg. Dry yeast                            
1/4 cup sugar, divided
¼ Cup Very Wary Water               
1 Cup Shortening
5 Cups All Purpose Flour               
1 Tsp. Soda
3 Tsp. Baking Powder                    
1 Tsp. Salt
2 Cups Buttermilk

·      Dissolve yeast and 1 tsp. Sugar in water.
·      Combine shortening, flour, soda, baking powder, salt and remaining sugar.
·      Stir in buttermilk.
·      Combine flour mixture and yeast mixture. MIX WELL
·      Turn dough out onto a lightly floured board and knead until smooth and satiny.
·      Roll dough out to about ½ inch thickness.
·      Cut with a 2-inch biscuit cutter and place rolls on greased baking sheets.
·      Allow to stand at room temperature 15-20 minutes.
·      Yield about 3 dozen

Dough may be stored in refrigerator and used as needed
