Turkey Dressing


Dice Celery the night before, store in water in refrigerator.
Do this first thing in the morning, so it will cool sufficiently.
First:
Gizzards, Neck, etc.           Cook gizzards, neck, etc. in pot                      
                                                 for 1 hour; keep adding water as needed.
                                          Reserve broth (with crumpled
                                                 parts, optional)
                                          LET COOL COMPLETELY


Celery (4 or 5 stalks diced)      Sauté celery& onion in butter
Onion (diced)                     then add water, bring to a boil
Butter                                 Cook till tender,
Water                                  LET COOL COMPLETELY



Second:
2 bags of Pepperidge farms       In a large pan put celery,     sage,                                 
Dressing (1 each) – or make own    dressing, eggs, salt, pepper,
3 Eggs, beaten                   ADD 2 – 2 ½ Cups of broth
1 ½ - 2 ½ tsp. Sage (to taste)   MIX WELL  (Well Moistened)
Salt, Pepper                      

                                         
· Bake at 350 degrees for 30 minutes in greased 9x13 pan.

If you happen to any leftover cornbread or biscuits, throw this in when making your dressing.

If you want to make sausage dressing, brown and drain a pound or ½ pound of sausage, add to above mixture.
