White Chili

1 Tbsp. Vegetable Oil
1 small onion, chopped
1 can chopped chilies (4 oz.)  Only use ½
1 tsp. garlic powder
1 tsp. salt
1 tsp. cumin
1 tsp. oregano
1 tsp. coriander
¼ tsp. cayenne pepper
2 cans of great northern beans- undrained
2 cans of chicken broth *
2 cans of chicken breast (5 oz) or 1 large can

·          Sauté onion in oil, add next 7 ingredients, and stir to blend.
·         Add remaining ingredients, bring to boil.
·         Reduce heat and simmer for 15 – 20 minutes.
·         Sprinkle Monterey jack cheese on top

*If using the Swanson broth, only use one can and do not drain your chicken.

*If using Campbell’s broth, use both cans and drain chicken



*If doubling recipe, double everything but if using Swanson broth only use 3 cans.
If using Campbell’s, use 4 cans
