Zuppa Toscano

1 LB Italian Sausage (hot or mild)
2 large Russet Baking Potatoes sliced in half and then in ¼ inch slices
1 large onion, chopped
½ can of Oscar Myer Real Bacon Bits (less fat than real bacon)
2 cloves of garlic, minced
2 Cups of Kale or Swiss Chard (chopped)
2 cans of Chicken Broth
1 quart of water
1 Cup of Heavy Whipping Cream

  • Cook sausage in a 300 degree oven for 30 minutes, drain on paper towels.
  • Place onions, potatoes, chicken broth, water, and garlic in a pot and cook on MEDIUM heat until potatoes are done.
  • Add crumbled sausage, bacon and pepper to taste. 
  • Simmer for 10 minutes.
  • Turn heat to LOW; add kale and whipping cream.
  • Heat through and serve.

Serve with hot breadsticks!
